So to make a full recipe you'll need 2 cups of a substitute. I would suggest sweet potato. You can used baked sweet potato or cook a sweet potato in the microwave until soft and scoop it out and purée it. It is possible to cut the recipe in half...only problem is you'll have half a box of cake mix left and it is a bit of a chore to cut an egg in half.
